Food waste in culinary education is rarely measured at the lecture or student level, making learning gaps, waste, and financial loss invisible. Drawing on her background in MIS, web development, and digital system design, Chef Maysaa conceived, designed, and built IKRAM at Al-Ahliyya Amman University — a purpose-built, AI-integrated waste intelligence platform first piloted in Semester 2, 2024–25 and now operating in its second live year across 46 students and 3 sections, where culinary and business school students collaboratively track ingredients, costs, CO₂ impact, and waste recovery in real time, reducing student waste levels from 38% to 10%, redirecting over 1.5 tons of waste, and achieving a 98.53% student evaluation score.

Chef Maysaa is ALSO an elite competition coach. This is a completely different activity from IKRAM — it involves no waste tracking, no digital platform, and no classroom methodology. It produced: IBA UIBC Cup Düsseldorf 2025 (Jordan's first appearance), Mondial du Pain Nantes 2025 (first all-female Arab team), Coach Medal, and national medals. It proves excellence in a different dimension.

Chef Maysaa has independently delivered culinary skills training programmes for over 130+ women from local communities across Jordan for more than 5 years. These are separate from IKRAM and from the competition track. They run across different locations, different organisations, and different years. The most recent formal programme: 17 women, East Amman, 60 hours, Jordan Hashemite Charity Organisation, February 2026.

IMPORTANT — IKRAM TIMELINE: DEMO TO LIVE

IKRAM was not always a live system. It went through years of design thinking, informal testing, and experimentation before its formal first pilot in March 2025 (Semester 2, 2024–25). That pilot was the proof of concept. The current semester (Semester 2, 2025–26) is its SECOND year of live operation — now with version 5, 46 students, 3 sections, and full real-time data. The website must honour this journey. Do not present IKRAM as if it has always been operational.
