Every kitchen session, every recovered ingredient, and every by-product transfer is logged, classified, and traceable against the standards set by Jordan's national food authority and the international food-safety community. Governance is not a separate compliance exercise — it is built into the framework students learn and operate inside.

This is not a letter of intent or an aspirational alignment — it is a formal bilateral agreement under which IKRAM's kitchen operations and waste-transfer processes are recognised as operating under JFDA oversight. The MOU establishes the legal and procedural basis for every by-product classification, every recovery transfer, and every compliance record generated inside Hall 20205.

In practical terms, the MOU enables three things that no informal teaching initiative could achieve on its own:

Lawful by-product transfer chain

Vegetable trimmings, surplus prepared food, and recovered ingredients can be legally redirected to certified composting partners and approved redistribution channels — with documented chain-of-custody at every handover.

Auditable hygiene compliance

Every IKRAM kitchen session generates a JFDA-aligned compliance trail that mirrors the standards applied to commercial F&B operations — not a watered-down educational version.

Industry-grade graduate readiness

Students graduate having already operated inside a regulator-aligned workflow, meaning their first day in a hotel or restaurant kitchen is not their first encounter with JFDA documentation.

Chef Maysaa Hassiba holds certification as a Lead Auditor in ISO 22000 — Food Safety Management Systems, the international standard governing safety across the entire food supply chain. The certification is the highest practitioner-level credential in the field and is the same qualification held by senior auditors in multinational hotel groups, food manufacturers, and national regulators.

Embedding a Lead Auditor inside the classroom changes what "teaching food safety" means. It is no longer the transfer of textbook HACCP into student notebooks — it is the daily application of the same audit logic used in commercial industry, modelled session by session. Students learn the standard from someone authorised to enforce it.

Every ingredient that enters Hall 20205 Cold Kitchen passes through a fixed, auditable lifecycle. No ingredient exits the kitchen without a logged classification.
