Before & After IKRAM
Measurable Student Outcomes

Before IKRAM, practical-class learning was judged subjectively from a finished plate. Today, every student carries a personal 16-week progression chart — and a falling waste percentage on that chart is, by definition, a rising skill level in the kitchen. The two are the same measurement.

Real-time intervention

Students falling behind are identified within one or two sessions — not at semester's end — and receive a tailored plan from the supervising chef before the gap widens.

🔄

Self-reinforcing improvement

Students see their own curve falling and understand why, making mastery internally driven rather than dependent on instructor feedback alone.

📜

Portable professional credential

Every graduate exports a documented, dated, institution-verified record of sustainability practice — a credential that travels with them into the labour market.

03
CLO & PLO Mapping
Academically Integrated, Not Parallel

IKRAM data flows directly into AAU's formal Course and Programme Learning Outcomes — turning sustainability and skill acquisition from soft claims into measurable, auditable academic outcomes.

International Recognition
Students on the World Stage

In a single calendar year, Chef Maysaa's coaching programme placed Jordanian students at the world's most prestigious baking competitions — and the international jury recognised her teaching directly.

Environmental & Societal Impact
Six UN Sustainable Development Goals

IKRAM contributes to six United Nations Sustainable Development Goals. Each contribution below is named together with the specific operational mechanism inside the system that delivers it — not a general claim, but the concrete process.

SDG 2
Zero Hunger

Zero Hunger

Trimmings recovered from every session and converted into stock powders, jams, pickles, and ferments — a circular food economy in operation.

SDG 4
Quality Education

Quality Education

Sustainability embedded as a graded, measurable component of culinary education. Every kitchen session is a data-generating learning event.

SDG 8
Decent Work

Decent Work

Graduates enter the market with commercially relevant data literacy. Community training has reached 100+ women across Jordan over five years.

SDG 12
Responsible Production

Responsible Production

No ingredient leaves the kitchen unlogged — recovered, composted, or JFDA-compliant transfer. Irresponsible disposal is not an option.

SDG 13
Climate Action

Climate Action

Carbon footprint calculated per ingredient per session in real time. 65.9 kg CO₂ avoided to date — Semester 2, 2025–26, Week 10 of 16.

SDG 17

Beyond AAU
Replicable. Scalable. Sector-Neutral.

IKRAM is bilingual, currency-agnostic, and architected without dependency on AAU's infrastructure. The waste-equals-skill equation generalises wherever skilled hands process tangible material.

🎓

Universities & Vocational Programmes

Any practical-skills syllabus that produces tangible waste — culinary, agriculture, food science, nutrition — can adopt the framework directly.

🏨

Hotels

The per-station, per-shift, per-ingredient protocol adapts directly to commercial hotel operations, giving F&B managers the same cost-and-carbon visibility instructors have today.

🍽️

Restaurants

Single-site and chains deploy at the prep-station level. The five analytical dimensions — ingredients, cost, nutrition, carbon, flavour — map directly onto menu engineering.

🏭

Any Material-Processing Operation

Central kitchens, catering, food manufacturing, agricultural processing — anywhere skilled humans process physical material at scale.

In Their Own Words
Student Voice

Two students — one from the IKRAM culinary classroom, one from the community training programme — describe what changed for them.

"
Seeing my waste percentage decrease across the semester motivated me to improve my knife skills and work more professionally every session.
— BA Culinary Arts student, A1411213, IKRAM participant
"
What I learned was not only cooking. I learned how to use ingredients responsibly and how small kitchen decisions can reduce waste and cost.
— JHCO Economic Empowerment Programme participant, East Amman, February 2026

The Case
Why This Impact Is Different

The case for Chef Maysaa Hassiba as the Most Innovative Teacher of the Year rests on evidence that is live, measurable, independently accessible, and institutionally embedded. IKRAM is not a proposal — it is a running system. Its students are not a projection — they are 46 active participants whose skill improvement is charted, session by session, in a public dashboard. Its awards are not honorary mentions — they are official certificates from the International Jury of the world's premier bread contest. Its community reach is not a claim — it is a certified achievement recognised by one of Jordan's most respected charitable organisations.

Why This Impact Is Different — infographic

Her students do not merely reduce food waste. They leave with data, with discipline, and with a professional mindset built to last — one that travels with them into every kitchen, every household, and every community they will ever enter.
